Chairman of the Diyarbakır Chamber of Restaurants, Kebabs and Desserts (DİLTO) Haşim Elkaan stated that there is no problem with the supply of liver and necessary precautions have been taken and said:

“After our Diyarbakır liver received the geographical indication registration certificate, its consumption began to increase. We do not have any problem with supply in summer. In winter, some problems started to arise in recent years, not just this year. We are making preparations for supply from surrounding provinces and districts. There may be problems with cutting. Despite this, it is necessary to take precautions for its promotion, production and production. We already have that measure. Our people should not think that lamb liver is not sold in winter, we also have lamb liver in winter. We made preparations for this winter with the cuttings we have grown and been in contact with since the summer. If in summer it can supply up to 4 tons per day, in winter it becomes 3 or 3.5 tons. “There’s not a big difference.”

But we don’t have that luxury in the liver. We do not have the opportunity to bring liver from abroad. Because that palate cannot give that flavor. The liver has no summer or winter. “At the beginning of this year, due to the pandemic and the earthquake, consumption was around 2 tons, now towards the end of the year our daily consumption is 4 tons,” he said.

Shopkeeper Remzi Dost Doğru stated that customers were upset by the prices and stated: “Diyarbakır is a city of lungs. As it is a liver city, most of our people who come from outside come here especially to eat liver. We welcome you in a pleasant way. They are very satisfied when they are hosts, and so are we.
